Honey Coconut Flan

I have always been a fan of “flan“.  It’s the creaminess that makes me love it so much. Just thinking of the creamy custard rolling around on my tongue and savoring the caramel flavor make my mouth water.  Often times while eating out I order it for dessert.  I have always been afraid to try making flan at home.  I’m not sure why I felt intimidated.  But I’m over that now!  Turns out making flan at home is extremely easy.  This one delivers on the creaminess big time with strong caramel flavor and a hint of orange.  It is a winner!

There are so many varieties of honey to choose from each time I make it I can create a new flavor profile. I used wildflower honey, but orange blossom would be perfect with the orange zest, lavender honey with a bit of lemon zest would deliver sweet citrus and floral notes to the custard.  Now that I’m over my fear of making this delicious dessert at home, I intend to play around with the recipe to see what other delectable flavors I can produce. I’m thrilled to have overcome my fear of making one of my favorite desserts at home.  I’d say it calls for a celebration and maybe another batch of Honey Flan!

Honey Coconut FlanIngredients:1 1/2 cups coconut milk3 eggs, lightly beaten1/4 cup honey1 teaspoon minced orange zestfresh berries of your choice for garnish

Instructions:Preheat oven to 300*F.  Spray four 1/2 cup ramekins with non-stick cooking spray (I use coconut spray)Combine  milk, eggs, honey and zest in a large bowl and whisk until blended. Divide evenly among ramekins and place on a wire rack in a pan of hot water.  Bake for approximately 20 to 30 minutes or until the flan is set.  Flan is done when a knife inserted in the center comes out clean.  Cool the flan on a wire rack and refrigerate for 2 hours.To serve flan, run a knife around the edges to loosen and invert onto a serving plate.  Garnish with fresh berries.
