Chocolate Avocado Pudding

- 2 ripe avocados
- ½ cup black onyx cocoa powder
- ½ cup maple syrup
- ¾ cup almond milk
- 1-2 teaspoons coconut extract
- Slice avocado in half and remove the pit.
- Scoop out the fruit and add it to a blender or food processor.
- Toss in remaining ingredients.
- Blend until smooth, stopping to scrape down the sides occasionally.
- Add a bit more milk to achieve your desired consistency.
- The pudding can be served right away or chilled until ready to serve.
- Garnish with toasted almonds, pecans or walnuts, or toasted coconut.
